Refined peanut oil has a high smoke point and a clean, neutral taste that makes it excellent for repeated deep frying — it is a classic restaurant frying oil. Compared with palm olein it offers a lighter mouthfeel at a higher price, and compared with soybean oil it is generally more stable for frying. Note that peanut oil is an allergen and must be labelled accordingly.
Refined peanut oil is processed for a neutral flavour, light colour, and high heat tolerance — ideal for frying and manufacturing. Cold-pressed (aromatic) peanut oil keeps the roasted-peanut flavour used to season Asian dishes and is best added at lower heat or as a finishing oil.
